Kafuli is a famous dish of Garhwal, especially for those greens-lovers. Kafuli originated in Uttarakhand and is another most loved and famous dish that is savoured by the people of every age. It is generally served as a main dish with steamed rice or chappati. 3 bunches spinach

2 teaspoon cumin seeds

8 green chilli

2 tablespoon powdered rice

1 teaspoon powdered turmeric

8 cloves garlic

4 cup water

2 pinches asafoetida

4 tablespoon yoghurt (curd)

1 bunch fenugreek leaves ( methi)

4 tablespoon mustard oil

1 teaspoon coriander powder

1/2 teaspoon ginger

salt as required

• Step 1 Use the washed spinach and fenugreek (methi) to chop. Take a casserole, hold it on medium flame and boil some water in it. Add spinach and fenugreek in that boiling water along with the chopped green chilies. • Step 2 Remove the mixture from flame and mix it in a blender. Put the paste aside, and cut the garlic and ginger. Warm oil on a medium flame in a pan and add garlic-ginger in the pan, then sauté it properly.Instead, add asafetida (heeng) and cumin seeds.Blend well. • Step 3 Add mashed paste, turmeric powder, dry coriander powder, salt and ample water to the saucepan. Let the mix simmer. Finally dissolve the rice powder in water and add it to the mix.Cover the pan and let the curry cook for 15 minutes over low flame. Remove from flame once done and serve hot.
